Eggplant Snack


Need:
  • Eggplant - 1 kg
  • Bulgarian pepper - 2 - 2.5 pieces
  • Tomatoes - 3
  • garlic
  • greens



Bake eggplants at 200 degrees about 40 minutes. You can cut them into pieces or leave wholes.
Pour fresh tomatoes with boiling water and remove skins.
Clear the eggplants from the skin and mix it in a blender with herbs, garlic and tomatoes. Then mix it with salt and pepper.
Cut a fresh Bulgarian pepper and mix with all we have.

Broccoli and cheese soup

So, we need:
  • 600g broccoli
  • 800 ml vegetable broth
  • 130 g processed cheese
  • 100 ml cream
  • 2 egg yolks (only fresh eggs)
  • salt, pepper, grated nutmeg

Wash broccoli, cut inflorescences, remove leaves, clean and cut the barrel. bring to the boil vegetable broth, add a broccoli and cook over medium heat for 5-8 minutes (I cooked about 10 minutes). Pull out a couple of inflorescences (for a beauty, you can not pull out), put into blender along with the rest. Pour back into pot the puree, add cheese and cook until cheese is melted. Remove it from heat. Mix cream with egg yolks, add to soup. Add salt, pepper, nutmeg to taste. I also sprinkled "leaves" of toasted almonds, it is very compatible with this soup.

Pumpkin-carrot-potato soup


For to 6 servings you need:

  • Pumpkin meat - 1 kg
  • 3 Carrots
  • 3-4 Potatoes
  • Pepper to taste
  • 1 teaspoon of paprika
  • 1 teaspoon of nutmeg
  • 200 ml of soy cream (can be replaced with a liquid low-fat cream)

How to prepare:
Peel and chop vegetables.
Boil them in water until tender.
Pass through a blender until puree.
Add soy cream, pepper, paprika and nutmeg. Mix well.

Diet chocolate mousse

Sometimes during your diet you are crazy about some sweets, especially chocolate. In this case, you can manage with one wonderful dessert, healthy and very tasty. Why is it healthy?
To prepare the mousse, we need:

  • 1 ripe of avocado fruit
  • 1 / 4 cup (85 g) of honey (in the original is maple syrup)
  • 1 tbsp of small brown sugar (we do not put)
  • 1 tsp vanilla extract (we had a vanilla sugar)
  • 1 / 2 tsp balsamic vinegar (ideally, if it is sustained)
  • 1 / 4 tsp soy sauce
  • 1 / 2 cup natural cocoa powder

Rice with yellow zucchini

This is a very simple recipe from whole-grain rice with zucchini.


For 4-6 servings you need:
  • 2 large zucchini (I used yellow zucchini)
  • lemon juice and zest (one lemon)
  • 3 tsp of olive oil
  • 1 tsp of turmeric
  • 1 L chicken or vegetable broth
  • 100-150 grams of brown rice or replace it with basmati rice

What to do:

Cut the squash into small cubes. Fry in a pan with olive oil.
Add lemon zest to squash. Mix it and cook on medium heat for 5 minutes.

Then add turmeric powder, broth, lemon juice and rice. Cook without closing the lid for 10-20 minutes, checking for the readiness of rice. The dish is ready, after the rice is cooked.

Vegetable casserole with pumpkin

grapefruit salad


Need for 2 servings:
- Grapefruit, 1 piece
- Avocado, 1 piece
- Cucumbers, 2 pcs medium size
- Red onion, 1 clove
- Leaf lettuce, 1 bunch
- Parsley, 1 bunch
- Pine nuts, 2 handfuls



For the filling:
- 1 tablespoon of olive oil,
- 1-2 tsp of lemon juice,
- 1 / 2 tsp of honey,
- Salt and pepper to taste
So:
- Clear the avocado from the skin and the bones; cut it into large wedges
- Cut the cucumber into large slices
- Cut the onion in half rings or quarters
- Clear the grapefruit from the peel, do it with each slice of peel; break into large chunks
- Cut large lettuce leaves and parsley; mix all ingredients including pine nuts

- For filling: Mix a little olive oil, lemon juice, salt, honey and black pepper.
