For 4-6 servings you need:
- 2 large zucchini (I used yellow zucchini)
- lemon juice and zest (one lemon)
- 3 tsp of olive oil
- 1 tsp of turmeric
- 1 L chicken or vegetable broth
- 100-150 grams of brown rice or replace it with basmati rice
What to do:
Cut the squash into small cubes. Fry in a pan with olive oil.
Add lemon zest to squash. Mix it and cook on medium heat for 5 minutes.
Then add turmeric powder, broth, lemon juice and rice. Cook without closing the lid for 10-20 minutes, checking for the readiness of rice. The dish is ready, after the rice is cooked.
