Vegetable casserole with pumpkin

Ingredients:

  • 4 eggs
  • 2 tablespoons of olive oil
  • 1 cup of flour with baking powder
  • 1 cup of shredded cheese, to your taste
  • 1 small zucchini, grated and squeezed lightly

  • 300 g of pumpkin, cutted into small cubes
  • 100-150 grams of mushrooms (champignons), we had oyster

Quote cooking method:
Lightly blend eggs with butter. Combine grated and squeezed zucchini, sliced squash, sliced mushrooms, sliced green onions and parsley in a separate bowl. Add the grated cheese, flour and salt and pepper to taste. Mix it. Add the egg mixture, mix it quickly again.
